Rosarito serves gastronomy found in the streets of Baja California Towns in Mexico. Our specialty the ‘Baja Taco’, is a natural fusion between Mexican Pacific seafood & oriental traditions. When Japanese fisherman arrived at the Pacific coast, they showed the Mexican cooks their tempura tradition and a blending of spices from the two cultures emerged, bringing a special hint of Asia into the Baja cuisine.

Rosarito’s 2nd truck is coming this spring and will feature some new items on the menu, like tostadas, ceviches and cocktails that we will be featuring in Collide for April and May.
